Underground Baking Co. had their Grand Opening Tasting this past Wednesday, December 9th.

Offered for sampling were their French Sourdough, Sourdough, Crusty Sesame, Challah breads and their unique and very tasty Cheese Biscotti.

Along with Cognac Spice Cake (not pictured – “decadent, moist cake infused with autumn spices, dried plums and Cognac”), Pumpkin Cheesecake (“with a ginger snap crust”), Chocolate Pecan Tart (“dark chocolate and pecans baked in a sweet, buttery pastry”), Pineapple Rum Cake (“soaked in Jamaican dark rum”) and Chocolate Truffle Torte (“rich dark chocolate spiked with fine espresso”).

Sharing the Square 1 Bistro kitchen space, they’ve installed ovens for bread (left) and dessert (right) baking.

Co-owners, Lisa Hoffman (not pictured) and Matthew Hickman are thrilled to be on Main Street, serving both the local and seasonal trade.
You’ll find fresh-baked breads cooling in the front windows daily.

The hardest part of the tasting was limiting myself to one or two samples of each item. The breads were every bit as delicious as the desserts!
Our group decided to stay and have dinner at Square 1 that evening. Watch for the upcoming review of that meal for seven. I don’t know if it’s the season of comfort food that’s making me ooh and ahh over Square 1′s menu or if they are just getting better and better at what they do? Whatever it is, they’re one of my downtown favorites!
