Greenville – Grill Marks has always been in the forefront of innovative food and beverage in Greenville, SC. When opened in 2012, Grill Marks was the first in the region to offer “Shake-Tails” the adult version of a kid-favorite. Followed shortly thereafter with Beer Floats, local IPA’s with a scoop of Grill Marks custom ice cream. Next, they introduced Greenville to the Beer Shake, a combination of rich craft beer, custom ice cream and some liquor’s to enhance the flavors. Now Grill Marks is introducing Greenville to the “Marks Ice Melts” Cocktail.
These deconstructed cocktails pair flavor infused ice spheres and cubes with premium liquors. As the ice melts, the flavor of the cocktail evolves, creating a unique and fascinating cocktail experience. After several testing and sampling sessions, Grill Marks is ready to roll out these clever concoctions that will help cool you down during the hot summer days and nights!
“We love brainstorming and coming up with new ideas, this is my favorite so far,” says Amanda Swacker, bartender at Grill Marks, Greenville. “The idea was to create ice cubes and spheres with all of the non-alcoholic components of a signature cocktail that when placed in the liquor, gradually melt into the perfect mojito, a savory old fashioned, even a classic martini with a candied Meyer lemon “twist”.

Nichole and I were invited to stop in and sample Grill Marks’ new Marks Ice Melts. At first sip, wide eyed reaction to alcohol content. As the ice (holding the non-alcohol parts of the cocktail) melts into the drink, flavors bloom and round out. We let them melt a little on their own, and then began poking at the ice to hurry up the mixing process. Why? Just could’t wait for nature to take its course!

Lemon Drop Melt – Hangar One Vodka, Meyer Lemon simple syrup, Meyer Lemon Cube, and candied Meyer Lemon twist; 3. Blood Orange Melt – High West Double Rye Whiskey, Blood Orange cherry simple syrup, and bitters infused (Old Fashioned) Cube; and 4. Mojito Melt – Brugal Rum, lime and mint simple syrup (Mojito) Cube.
Even though we had only a few sips from each, we thought we’d better have some food.
I’m a total “heat sissy”, so I pulled fries, cheese, and bacon out of this cheesy mess of yum, avoiding jalapenos.
And I left all the stuffed jalapeno hush puppies/fritters (didn’t write down the name) to Nichole. If you like it hot, these are for you!
Fairly hungry, I ordered a Grill Marks Burger (approx $8) with lettuce, tomato, onions, pickles and cheddar cheese. It arrived cooked as ordered. Delish!
Then GM, Joe Fletcher, sent out a surprise huge Margarita. A BIG take on a classic done well.
You should have seen the looks we got from other tables and folks walking by our outdoor table. We just looked back and smiled.
So, we’re taking notes, heads down, while talking about what was next on this day’s “work” schedule, when, wait for it . . .
Toasted Pina Colada and Perky Kilt ShakeTails! That’s right, Joe did it again. He sent out two of their famous ShakeTails – adult milkshakes “minus the milk, add liquor”. Nichole had had them before, but I was uninitiated. Both were incredibly delicious!
Only problem – what to drink the next time I’m at Grill Marks!
