Vivace sniffs out a delicacy
Midtown restaurant offers a special menu featuring truffles Nov. 16 – 21
Charlotte – Truffles don’t just grow on trees. They grow under them and have to be sniffed out by prized truffle-sniffing dogs or pigs. The esteemed fungi – once called “the diamond of the kitchen” – are coming to Vivace for a limited time.
Executive Chef Mike Suppa has created five distinctive dishes to showcase the rich, pungent flavor of this sought-after, hard-to-find delicacy. But these features will be on the menu for one week only.
“This is the first time we’ve done anything like this,” said Suppa. “I’m ecstatic to work with an ingredient as special as the truffle. Their flavor is so rich and earthy; there’s nothing else like it. We’ve developed some rich, fall dishes that really let the truffle flavor shine.”
The specials are available a la carte or as a prix fixe meal of $75:

Roasted Chestnut Soup (Burgundy Truffle)
with Green Apple Fritters, Tuscan Kale Pesto, Cider Crema
Parmesan Gnocchi (Black truffle)
with Braised Veal, Madeira Demi, Black Truffle Burro Fuso
Pancetta Wrapped Rabbit Loin (White Truffle)
with Rosemary Stracciatella, Cannellini Bean Ragu, Caramelized Pumpkin
