Asheville – Looking for cooking classes in the Asheville area? The Farm, a homestead that’s grown into a fabulous destination venue in Candler, NC, has recently launched cooking classes in their brand spankin’ new commercial kitchen.
Owners Bev and Myron Gottfried have hired Executive Chef Mike Ferrari to manage what they expect will be a robust catering business and are bringing in guest chefs for cooking classes.
When my friend Barrie and I arrived, we mingled with five or six other attendees, Bev, Myron, Chef Mike, and guest chef, Michelle Kelley of Crackerjack Chef, in an intimate area to the side of the business end of the kitchen. Chefs Mike and Michelle had set a seasonally decorated long table with hors d’oeuvres.
It’s easy to hear and see the action from seating at a long island in front of the stoves, ovens, etc.
This was a Tart Class, one savory and one sweet. Even though Barrie is an exceptional baker and I’m no novice, we both learned a couple new tricks of the trade from Chef Michelle.
Chef made caramel from scratch for the Chocolate and Salted Caramel Tart. What I especially appreciated was the way Michelle handled a not-so-successful attempt with aplomb. She re-did the sugar caramelization step and used the failed batch as a teachable moment on how to easily clean stuck-on messes from pots and pans.
Wine, one blush and one red, was served with the dessert tart by The Farm’s wine consultant.
This was The Farm’s inaugural cooking class, so I’d expect a few pricing and procedural tweaks as they go forward. All in all it was a fun and educational experience. Look for Spring class information on their website soon.
