ASHEVILLE, NC — A new team member has joined Buffalo Nickel, the West Asheville restaurant which opened in March 2014 and was recently featured in The New York Times.
Owner Lynn Foster has brought on-board John Bausone to serve as the restaurant’s executive chef. Prior to joining Buffalo Nickel, Bausone spent the last 13 years as a cafe owner and as an executive chef of Beachland Ballroom, Grovewood Tavern and Forest Hill Kitchen, all located in Cleveland, OH. He studied under acclaimed chef Robert Reynolds at the Chef Studio in Portland, OR, where he developed a passion for cooking with fresh, local and sustainable ingredients.
“We are so excited to welcome John to the Buffalo Nickel family,” Foster said. “John’s philosophy matches mine in that we shouldn’t just be calling it ‘farm to table,’ we should always be using locally sourced and sustainable ingredients as much as we possibly can, not just for the sake of being trendy but as a way of life and as a responsibility to our diners.”
Bausone has recently finalized a new dinner menu with updates to longtime favorites and the addition of original recipes highlighting his personal take on “southern fare” reimagined with some ethnic influence. Popular dishes include the Braised Short Rib, Fried Chicken and Seared Yellowfin Tuna.
Bausone’s vision for the menu is to create simple food that is approachable but made with the highest quality ingredients and care. “Food tastes better when it’s grown locally and prepared in season,” he said. Therefore, customers can expect a rotating menu at Buffalo Nickel. “If the menu is always changing people have something to look forward to,” Bausone said.
Additional projects in the works at Buffalo Nickel include expansion of the in-house catering menus and the debut of lunch service later this year. Special dinners paired with local craft beer, wine and spirits are in the planning stages, as well.
“We are confident that John’s talent and creativity, paired with our beautifully restored venue, will keep Buffalo Nickel in the spotlight of the burgeoning West Asheville restaurant scene,” Foster said. “It’s very rewarding see my vision for Buffalo Nickel coming to fruition.”
Buffalo Nickel is located at 747 Haywood Road and is open Tuesday through Saturday from 5 p.m. to 12 a.m., as well as from 12 p.m. to 12 a.m. on Sundays.
