Charlotte – Truffles have been a culinary rock star since at least the 20th century BCE. Centuries later – in 1825 – Jean Anthelme Brillat-Savarin wrote in “The Physiology of Taste; or, Meditations on Transcendental Gastronomy” that the “truffle is the diamond of the art of cookery.” The humble delicacy, which has to be rooted out near tree trunks by trained dogs or pigs, is still prized for its earthy flavor and relative rarity. The venerated fungi are making an appearance at Vivace – and like the reclusive rock stars they are – only for a limited engagement.
Vivace’s Executive Chef John Caputo has created four savory dishes to showcase the lush, earthy flavor of this delicacy. But these features will be on the menu for one week only.
“I’m excited to work with an ingredient as unique as the truffle,” said Caputo. “They’re so rich and earthy; there’s nothing that comes close to that flavor. We’ve developed some rich, fall dishes that showcase the unmistakable taste of the truffle. And our pastry chef, has created the only dessert appropriate for a truffle dinner – chocolate truffles.”
